Designing the right still was important, it is not everyday a man buys himself a still, no point in being half hearted about it.

With all of the questions about which type of still is best, it seemed appropriate to go the hybrid route of a pot still with a bubble plate column on the side. It is also important that this column has the ability be bypassed, or partly bypassed.

A whisky helmet was a must, these things don't just add bling, they perform some of the magic. (Well until one learns the science, then it becomes not magical anymore)

I do live in Potato country so a still that can produce Vodka is an advantage. This may only see use around the annual potato festival, but it will be of some use. The ability to strip back to neutral also takes any fear of a failed batch away, it can simply be stripped.

Might need a gin basket too. A range of gins based on honey spirits should be an interesting creative outlet and a product that is both simple to make in small and unique batches but also appealing to the public is a good one to have.

This seems simple, a pot still, bubble plate column on the side, a gin basket with by pass.

Then I get reading about thumpers and rum production. Hmmm, I say to myself, might need a pair of them too.

And so it was commissioned.

I got to thinking about the gin basket, if I really wanted to experiment with gin basket contents wouldn't it be cool to be able to swap to another basket mid run and compare the flavours there and then.

Of course I added a second Gin Basket, it just made sense.
