The Pantry is where various mead ingredients are discussed.

I don't keep cleaning supplies or 'additives' in the pantry, they have their own storage areas. This is not a definitive list, it is only a small portion of the various ingredients I have used, it is growing as time permits it to.

The information is based on experience and research. I spend considerable time getting to know each ingredient I use. Not just learning about its flavours, aromas and recipe friends, but also about the best way to extract the properties, and of course the different flavours that get extracted with different methods.

Some things like to be boiled, some do not. Some things are better cold steeped, some are best served by a soaking in high proof alcohol and some are best served by putting them straight in the fermenter. 

There is much to be learnt from the beer brewers around this. Brewers are aware that hops used in a boil for 5 minutes or so will give aroma, 10 minutes or so will give flavour and twenty minutes or more will give bitterness.

This tells us that more boiling doesn't give more flavour, it gives different flavours.

I am always dubious of a recipe that treats all of the ingredients in the same manner. Sometimes this is fine, but often it is a missed opportunities to add value.
